The company that developed Computer Age Dentist doesn't appear to be available anymore. I tried to obtain official support, but it was impossible which means you will have to consult the built-in manual/documentation.
You can either do it using Help > Contents, but you have to launch the software first or access the installation directory. You'll find the documentation as CHM or PDF file format.
On a side note, access Help > About and use the information you find to get in touch with th developers.
I recently did monthly statements, but accidentally entered 2015 instead of 2014, now it will not allow me to enter any payments or post. How do I reverse it?

Unfortunately, there is no information about this software. The official website uses another product, while Computer Age Dentist can't be found. However, firstly I recommend checking the official help. Since this might be a common error, press F1 and then go to Help and read about data modification within the program. This appears to be the only way possible regarding this software. Since it's launch, the developer has been acquired by other companies, and it's now called CareStream Dental.
You can take advantage of the functionality of the export feature. Access the main menu then use Export to backup the data from your computer. Install the application on another computer and then use the opposite action > Import. Transfer the backed up data with a USB stick or a portable HDD and that's it. Load the data and it should as if it were the first computer.
Is there a version of Computer Age Dentist that works on Windows 7 or 8? I have version 5.8 and my IT guy could not get it to work properly on Windows 7, even in XP mode.

There is no update for Windows 7 or 8 because the company that developed this application was acquired by Kodak. For updated versions or additional information you need to ask on Kodak Support.
